We have some exciting news to share. We've just brought in a whole cattle's worth of Halal Kobe Beef! This means that for a limited time, we can offer you any cut you'd like — our complete "full lineup" is now in stock.
Why "Now" Is the Best Time
Halal-certified Kobe beef is, by its very nature, available only in extremely limited quantities. Halal slaughter must be carried out in accordance with Islamic law, and the number of facilities equipped to handle it is limited — so the number of animals reaching the market is very small to begin with.
For that reason, once we bring in a whole animal, stock runs out starting with the most sought-after premium cuts used for steaks. We've often had to tell customers "that cut is sold out," and we're sorry for the inconvenience this has caused.
Right now, we've just secured a full animal. That's exactly why this is the best time of the year — you can take your pick of any cut.
Just How Rare the Tenderloin (Hire) Is
To give you a sense of just how scarce some cuts are, take the tenderloin (known as hire, or here in the Kansai dialect). The yield from a single animal is very small — the edible portion that can be cut into steaks comes to only about 4–5 kg. From a large animal, that's all you get. This is exactly why the tenderloin tends to sell out early.

Lunch and dinner are the same price. Lunch is normally closed — we open it only when there is an advance reservation for 2 or more guests, and we may not be able to on busy days.
2. Course pre-selection (optional, recommended)
Halal-certified Kobe beef is rare — some cuts sell out by service time. Pre-select to lock your preferred cut, or skip and decide at the table.

うれしいお知らせがあります。ハラール神戸牛を新たに1頭分仕入れました！ これにより、当面のあいだ、どの部位でもご希望に合わせてご用意できる「フルラインナップ」の状態が整っています。
なぜ「いま」がベストなのか
ハラール認証に対応した神戸牛は、そもそも流通量がごくわずかです。ハラール対応の食肉処理(屠畜)はイスラム法に則った手順で行う必要があり、対応できる施設も限られているため、市場に出回る頭数自体がとても少ないのが現状です。
そのため、1頭を仕入れると、まずステーキに使われる人気の高いプレミアムな部位から順に在庫がなくなっていきます。普段、当店でも「この部位は品切れです」とご案内することが多く、ご不便をおかけしてきました。
いまは1頭分をまるごと確保した直後。だからこそ、どの部位でも選び放題の、1年でいちばん良いタイミングなんです。
ヒレ(ヘレ)はこんなに希少
部位の希少さをわかりやすくお伝えすると、たとえばヒレ(関西では「ヘレ」とも呼ばれます)。これは1頭の牛から取れる量が非常に少なく、ステーキカットできる可食部はおよそ4〜5kg程度しか取れないと言われています。体重の大きな牛から、わずかこれだけ。だからこそ、ヒレは早い段階で品切れになりやすい部位なのです。
